TANGY GOJI TAHINI DRESSING

Welcome to my new series called, the anti-inflammation series! One of the easiest ways to reduce inflammation in the body is by eating antioxidant-rich foods.

Goji berries ☄️ are phenomenal little powerhouses + the number one herb in TCM when it comes to anti-aging, longevity, + fertility. They help to balance hormones, support the liver + taste divine too!


INGREDIENTS

1/3 cup goji berries, soaked in 1 cup boiling water

1/4 cup olive oil

2 tbsp raw apple cider vinegar

2 tbsp lemon juice

2 1/2 tbsp finely grated ginger

3 tbsp tahini

1/4 tsp turmeric powder

a good pinch of black pepper

1 tsp pure maple syrup

2 tbsp goji water

2 tbsp coconut aminos/tamari


METHOD

1. To a blender add olive oil, raw apple cider vinegar, lemon juice, ginger, tahini, turmeric, black pepper, maple, goji soaking water syrup, coconut aminos/tamari.

2. Drain goji berries + save the remaining goji water for a nourishing tonic.

3. Toss goji berries into blender + blend all on high for 30 seconds until luxurious + creamy.

4. Pour into an airtight sealable glass jar + store in the fridge for about 10 days.
